African American, Alaska Highway, Company A. Born: 4 December 1919, Louisiana. Died: 13 March 2007, Lafayette, LA. Enlisted: 16 Mach 1941 Jacksonville Army Air Field, FL and discharged 18 September 1945.
Education: grammar school. Civil occupation: driver truck, farm laborer and a cook on the Highway. His father was Laster Prejean and his mother was Estella Arsono. He spouse was Inez Prejean.
His parents were tenant farmers for twenty one years. Joseph was illiterate when he joined the Army, but learned to read from a buddy who was dating a teacher. Earned extra money by gambling, crap games. He attended the baking school at Carcross, Yukon Territory and cooked for the Army. From his training he became a respected Louisiana chef. Joseph had five children and all of his children went to college.
